Our tortillas tell the story of Toro Loco as both a restaurant and a philosophy. We opt for a process with a full-bodied, delicious result, even if it means tripling our prep efforts. Even the simplest of culinary elements – our tortillas – represent a significant emotional and physical investment for our team.

What Makes Our Tortilla Different?

Non GMO
We source our non-GMO, organic heirloom corn from Mexico, through the company Masienda in Los Angeles.

Organic
We use our organic corn to make nixtamal, an Aztec word for corn which has been partially cooked and soaked with calcium hydroxide.

Molino
We grind our nixtamal with a molino, or a traditional Mexican corn mill.

Masa
We knead the ground corn into masa, a corn dough.

Cooked on Flat-top Griddle
We cook the masa on a flat-top griddle to create our unique, gorgeous tortillas.

Because we use Mexican corn, none of our tortillas contain flour or gluten.
